Keep the fresh truffles

 

The fresh truffle is a perishable food with a limited duration in time. If kept in the fridge, it can be maintained for a maximum of two weeks. Unfortunately it is not always possible to consume immediately after the harvest, and therefore it is advisable to know the best procedures to preserve its organoleptic characteristics. So, it is preferable to wash the truffles just before to use, brushing them under water and then drying them.

 

Storage in the fridge

 
 
The most effective way to keep fresh truffles is to wrap them individually with a sheet of absorbent paper, and put them in an airtight glass jar and place it in the fridge, (in this case the truffles should not be cleaned). Replace the paper every day or when the paper is humid. Or we can also completely immerse the truffles in airtight jars filled with rice and put them in the fridge. Rice with this storage method will keep a good aroma of truffles, usefull to make an exquisite risotto.

 

 

Frozen truffles

 

We can also freeze truffles, especially the summer truffles. First they need to be cleaned, then brushed under water and dried thoroughly. We take a cardboard serving try, let’s cover truffles with a plastic wrap and slice them with a truffle slicer, putting a first layer being careful not to overlap the slices of truffles. Cover the slices of truffles and prepare a second layer, covering also with the film, until all the truffles. We wrap well the last layer with the film and then the whole cardboard serving tray; let’s put it in a large bag and store it in the freezer.
